A contractor is doing most of the work, but I wanted to take a few swipes with the sledge hammer!

We did that in our last house in NJ. It's a weird almost suffocating feeling when it's all down to the studs and floor boards, like you're never going to have a kitchen again. But of course you will and better than ever. Do make sure you hang plastic sheets in the doorways if you're sheetrocking, because when they sand them, that sheetrock dust is a Bitch and gets all over everything!
